Ingredients You Will Need for this Easy Granola Recipe

Here’s a look at the ingredients you need to make this recipe. Most of our ingredients are things you will likely already have in your fridge or pantry. Missing something? Don’t worry, we’ve suggested some ingredient swaps and tricks that might help. Don’t let one missing ingredient prevent you from making a delicious from-scratch meal, snack or dessert for your family.

  • Coconut oil – is high in lauric acid. This is thought to improve digestion and act as an inflammatory. Coconut oil is also rich in collagen which is known to be great for skin health in general. It may also aid to a more even skin tone. Its coconut taste adds a lovely to depth of flavour to this easy granola recipe. Coconut oil is also what I consider to a be a ‘clean oil’! Coconut oil is free from seed oils which I steer clear of. Seed oils are ‘refined’ using highly engineered processing methods and the introduction of harmful compounds such as hexane.
  • Maple syrup – is a natural sugar option. I choose Maple Syrup over honey, as I prefer the taste of Maple syrup in this simple and easy granola recipe. Maple syrup actually has a lower glycaemic index than honey. This just means it raises your blood sugar level more slowly. It is also an excellent source of manganese, calcium, potassium, zinc, and riboflavin. At the end of the day though, it is a sugar. So, use sparingly.
  • Golden caster sugar (optional) – If making this easy granola recipe a little sweeter then I will normally use Coconut sugar instead of caster sugar. The benefit of additional sugar is the added crunch as well as the added sweetness. Coconut sugar is my preference. Its another natural sugar, and it has a deeper flavour which I like. Coconut sugar also has a lower glycemic index than table sugar. It is also thought to retain some of the fiber from the coconut, which could further slow blood sugar spikes.
  • Oats – have a low glycemic index, which is why they are thought to keep you fuller for longer.
  • Good quality salt – such as Celtic sea salt have high mineral contents. This makes it a much better choice than table salt. Salt is necessary for your body to function. Salt supports a healthy electrolyte balance, aids digestion and helps to regulate blood pressure.
  • Cinnamon powder – I have only just learnt that cinnamon is great for your teeth! Its antimicrobial properties are meant to help prevent tooth decay and bad breath. It is also a fantastic antioxidant and anti-inflammatory, which help to protect you against all sort of health issues!
  • Flaked or chopped blanched almonds (or another nut of your choice) – similar to seeds nuts are a super food. They are filled with healthy fats, fiber, vitamins and minerals. (Technically pine nuts are actually seeds… but you get the gist!)
  • Coconut flakes (optional) – I don’t always include coconut flakes, but if you have them to hand, they are delicious
  • Sultanas (swap with Raisins or Dried Cranberries) – are a great source of fiber and potassium. They are also antioxidants. Sultanas are a dried type of grape, a golden variety.
  • Seeds (Sunflower and Pumpkin) – are an excellent source of protein and fiber. The health benefits are endless as they are also filled with healthy fats, minerals and vitamins. They are even antioxidants. The more you can include them in your diet the better.

Tips For Success For Easy Granola Recipe

  • Tip One – Make sure the coconut oil and maple syrup are really bubbling before adding the dry ingredients. They should be caramel in colour and very hot!
  • Tip Two – Make sure you do not touch the bubbling coconut oil or maple syrup. It will stick to your skin and burn! Keep little ones well back at this stage!
  • Tip Three – This recipe is made to be adjustable. Swap fruit, nuts, seed, even the maple syrup for your preferred ingredient. This easy granola recipe is very adaptable and can be customised!
  • Tip Four – Scrape the bottom of the pan carefully when cool. I like to keep as many big clusters of granola as possible. If giving to little ones you might want to break these up a bit!

  • 1 Wooden spoon
  • 1 Cup measure
  • 3/4 Cup measure
  • 1/2 Cup measure
  • 1/4 Cup measure
  • 1 Teaspoon measure
  • 1/4 Teaspoon measure
  • 1 Airtight container

Ingredients

  • ¾ cup Coconut oil (melted)
  • ½ cup Maple syrup I use organic dark amber
  • ¼ cup Golden caster sugar (optional) I will swap this with coconut sugar or light brown sugar, it makes the granola a bit crispier and sweeter. I will sometimes reduce the maple syrup by half if including sugar as I prefer the granola less sweet.
  • 3 cups Oats
  • ¼ tsp Good quality salt
  • 1 tsp Cinnamon powder
  • 1 cup Flaked almonds This can be replaced with a nut of your choice or with coconut flakes.
  • ½ cup Coconut flakes (optional) I don't always include coconut flakes, but if you have them to hand they are delicious
  • 1 cup Sultanas or raisins
  • ¾ cup Mixed seeds You can used any seeds here, but I use sunflower and pumpkin. (I prefer more seeds, and will add a whole cup)

Instructions

  • Pre heat the oven to 180℃ (fan) / 400℉ or 200℃ (conventional).
  • Add ¾ cup of melted coconut oil and ½ cup of maple syrup to a large flat bottomed pan. Add ¼ cup of sugar if using.
  • Heat on medium-high until the maple syrup and coconut oil are bubbling and frothing. Stir slowly, careful not to burn yourself.
  • Add 3 cups of oats, ¼ tsp of salt and 1 tsp of cinnamon powder. Stir well and reduce the heat to medium-low.
  • Add 1 cup of flaked almonds. (Add the ½ cup of coconut flakes is using.) Stir again.
  • Take off the heat and transfer to the preheated oven for 10 minutes.
  • After 10 minutes remove from the oven and carefully stir. Lightly press down on the granola mix using the back of your spoon and transfer back to the oven for another 10 minutes.
  • Repeat the step above one more time. When you stir make sure that the granola has not stuck to the bottom of the pan. Be gentle when stirring (to stop over spill) and to keep as many large nuggets of granola as you can. Lightly pressing the granola down into the pan after stirring helps the clusters to form.
  • Remove from the oven and allow to cool in the pan.
  • Once cool add 1 cup of raisins or sultanas and ¾ cup of mixed seeds, mixing well.
  • Store in an airtight jar and enjoy!
