Simple granola recipe ingredients before the seeds and raisins have been mixed into the roasted oats

Easy Granola Recipe

This easy simple granola recipe is delicious and quick. With few steps, and simple whole ingredients. It really is easy and more importantly delicious. I make this every single week. We eat for breakfast and as a snack with a little milk and yoghurt. The seeds add a wonderful crunch as well as being an excellent source of nutrients. The sugar in this recipe can be easily scaled up or down to suit your family and tastes.

Equipment

  • 1 Large flat bottomed pan I use cast iron
  • 1 Wooden spoon
  • 1 Cup measure
  • 3/4 Cup measure
  • 1/2 Cup measure
  • 1/4 Cup measure
  • 1 Teaspoon measure
  • 1/4 Teaspoon measure
  • 1 Airtight container

Ingredients

  • ¾ cup Coconut oil (melted)
  • ½ cup Maple syrup I use organic dark amber
  • ¼ cup Golden caster sugar (optional) I will swap this with coconut sugar or light brown sugar, it makes the granola a bit crispier and sweeter. I will sometimes reduce the maple syrup by half if including sugar as I prefer the granola less sweet.
  • 3 cups Oats
  • ¼ tsp Good quality salt
  • 1 tsp Cinnamon powder
  • 1 cup Flaked almonds This can be replaced with a nut of your choice or with coconut flakes.
  • ½ cup Coconut flakes (optional) I don't always include coconut flakes, but if you have them to hand they are delicious
  • 1 cup Sultanas or raisins
  • ¾ cup Mixed seeds You can used any seeds here, but I use sunflower and pumpkin. (I prefer more seeds, and will add a whole cup)

Instructions

  • Pre heat the oven to 180℃ (fan) / 400℉ or 200℃ (conventional).
  • Add ¾ cup of melted coconut oil and ½ cup of maple syrup to a large flat bottomed pan. Add ¼ cup of sugar if using.
  • Heat on medium-high until the maple syrup and coconut oil are bubbling and frothing. Stir slowly, careful not to burn yourself.
  • Add 3 cups of oats, ¼ tsp of salt and 1 tsp of cinnamon powder. Stir well and reduce the heat to medium-low.
  • Add 1 cup of flaked almonds. (Add the ½ cup of coconut flakes is using.) Stir again.
  • Take off the heat and transfer to the preheated oven for 10 minutes.
  • After 10 minutes remove from the oven and carefully stir. Lightly press down on the granola mix using the back of your spoon and transfer back to the oven for another 10 minutes.
  • Repeat the step above one more time. When you stir make sure that the granola has not stuck to the bottom of the pan. Be gentle when stirring (to stop over spill) and to keep as many large nuggets of granola as you can. Lightly pressing the granola down into the pan after stirring helps the clusters to form.
  • Remove from the oven and allow to cool in the pan.
  • Once cool add 1 cup of raisins or sultanas and ¾ cup of mixed seeds, mixing well.
  • Store in an airtight jar and enjoy!
