Pre heat the oven to 180℃ (fan) / 400℉ or 200℃ (conventional).
Add ¾ cup of melted coconut oil and ½ cup of maple syrup to a large flat bottomed pan. Add ¼ cup of sugar if using.
Heat on medium-high until the maple syrup and coconut oil are bubbling and frothing. Stir slowly, careful not to burn yourself.
Add 3 cups of oats, ¼ tsp of salt and 1 tsp of cinnamon powder. Stir well and reduce the heat to medium-low.
Add 1 cup of flaked almonds. (Add the ½ cup of coconut flakes is using.) Stir again.
Take off the heat and transfer to the preheated oven for 10 minutes.
After 10 minutes remove from the oven and carefully stir. Lightly press down on the granola mix using the back of your spoon and transfer back to the oven for another 10 minutes.
Repeat the step above one more time. When you stir make sure that the granola has not stuck to the bottom of the pan. Be gentle when stirring (to stop over spill) and to keep as many large nuggets of granola as you can. Lightly pressing the granola down into the pan after stirring helps the clusters to form.
Remove from the oven and allow to cool in the pan.
Once cool add 1 cup of raisins or sultanas and ¾ cup of mixed seeds, mixing well.
Store in an airtight jar and enjoy!
