Peanut Butter Protein Balls with a Startling Strawberry Coating

These strawberry dough balls are easy and quick to make. They are the perfect postpartum snack. Store in the freezer. Simply pull out when hunger sets in and your short on time (and hands). They also make the perfect toddler lunchbox treat. They are healthy and packed full of nutrients and protein. Brilliant when you want to boost your breast milk supply.

Equipment

  • 1 Spatula
  • 1 Large bowl
  • 1 Small bowl
  • 1 Cup measure
  • 1/2 Cup measure
  • 1/4 Cup measure
  • 1 Tablespoon measure
  • 1 Teaspoon measure
  • 1 Tray (suitable for freezing)
  • 1 Butter pan or microwave (if melting the coconut oil)
  • 1 Blender (if grinding the oats, you can buy oat flour)

Ingredients

  • 1 ¼ cup Oat flour (Ground oats, just put them in the blender)
  • ½ cup Smooth peanut butter
  • ¼ cup Coconut oil, melted
  • ¼ cup Agave syrup (Swap with Maple syrup or Honey)
  • 1 tsp Vanilla essence or paste
  • 2 tbsp Freeze dried strawberry powder
  • 1 tbsp (Extra for dusting) Freeze dried strawberry powder (Optional)

Instructions

  • If not using oat flour, blend the oats first to a fine powder. You will probably need about 2 cups of oats depending on the size of the oats you are using.
  • If not already melted, melt your coconut oil on the hob or in the microwave.
  • Add 1 1/4 cup of oat flour to a large bowl.
  • Add 1/2 cup of smooth peanut butter to the same bowl.
  • Add 1/4 cup of melted coconut oil to the bowl.
  • Add 1/4 cup of agave syrup to the bowl.
  • Add 1 tsp of vanilla paste to the bowl.
  • Add 2 tbsp of freeze dried strawberry powder to the bowl.
  • Stir well to combine.
  • Using the tbsp measure scoop 1tbsp the mixture at a time, and using your hands form dough balls.
  • Add 1 tbsp of freeze dried strawberry powder to a small bowl.
  • Roll each dough ball in the powder, lightly coating the outside. Shake off any excess.
  • Place on a tray and freeze overnight.
  • Store in a freezer safe container.
  • Simply remove from freezer and eat when soft enough for your preference. They keep very well in lunchboxes.
